We invite you to learn about olive oil production at the Katzrin Village 1,500 year old olive press, the oldest known functioning olive press in Israel!
Work the ancient stone mill to crush the olives, preparing them for the pressing process.
Once thoroughly crushed, the olives become a pulp, which is then placed into a flat, flexible, woven basket called a frail.
The frails are placed in a corkscrew press, a method of applying plenty pressure, and a liquid of combined oil and water is expressed into a vessel beneath the press.
The next task is isolating the olive oil from the water. How was that achieved in ancient times? What tools were available? This is where you’ll see the special traditional method applied to isolate the olive oil from the fruit water.
The result is a freshly pressed oil, rich in polyphenols, healthy omega-9 fatty acids, and antioxidants exclusive to olives.
This is a fun, memorable and immensely rewarding experience, in which families and groups alike will enjoy taking an active part!
Everyone helps fill the stone mill basin with olives, and further lends a hand in every step of the production process. No matter the line of work, each role is as important as the next.
The olive oil theme continues:
Make your own pita over an open fire. Roll out the dough and bake till steaming and delicious. Break off some warm bread and dip it into your own freshly pressed oil. Add a sprinkling of hyssop seasoning and savor the authentic taste of an ancient, mouthwatering delicacy.
From there you can make your way to the ancient Israeli home, where olive oil lamps illuminate the interior of this restored stone house.
