The sensation of facing the vast mountainous views; passing golden wheat fields ripe for sheaving – a central theme of the Book of Ruth (“So she kept fast by the maidens of Boaz to glean unto the end of barley harvest and of wheat harvest” – Ruth 2:23); stopping by the roadside and partaking in fresh cheeses and breads dipped in olive oil. How did communities live? What were their livelihoods?

The Katzrin Village community engages in ancient industries of the time. Depending on the time of your stay, you can participate in the traditional process of three different industries: winemaking, olive oil production, and the wheat harvest.
The experiences are not only educational; they are immensely enjoyable, and you’ll end up with your own bottle of grape juice (drunk straight away or wait till it ferments to wine!), olive oil, or traditionally baked pita bread.
The annual wheat harvest takes place in the spring. Venture out to the fields and cut the sheaves. Thresh and winnow the wheat on the threshing floor, and grind to flour to bake fresh pita bread, or cook the freshly harvested kernels whole, drizzled with local honey.
Summertime is winemaking time, when grapes get crushed by clean, bare feet, letting the sweet, sticky juice flow into caskets; a true biblical experience making the most essential element of religious ritual.
And finally, the fall, when you can get a view of history with the opportunity to take part in olive oil production, a primary industry of the time. Press the olives, using a 1,500-year-old stone mill, resulting in smooth, piquant oil to season salads and breads.
Cross the timeline by donning traditional robes and taking a tour of the Katzrin Village with an experienced guide wearing traditional clothing. They will show you the historical olive oil factory, the ”gat” where wine was made, and the wheat crop. You may be surprised what an ancient plot of land looked like!
Visit a 1980s excavation of the village and the ancient synagogue, which has been partially rebuilt, where the structure and embellishments reflect a wealthy community of old.
Finally, explore an ancient Israeli home, rebuilt on its original foundation, which will give you a glimpse of the daily life and responsibilities of a family from bygone days. Notice the cob, the building material used, utilised till today for sustainable living. Grind your own flour on a portable millstone used by the woman of the house (“she worketh willingly with her hands” – Proverbs 31) and prepare dough to make pita. Bake over the fire, and enjoy with traditional olive oil and hyssop seasoning for a delicious meal with flavours of the Bible.
